My chicken burns when i cook it..why?

I am a simple guy and in the future I will learn to do all that prep stuff however, this is not a problem due to prep. here is what i do: I defrost the chicken the night before by putting it in the fridge (normal right?) I then season it and place it on a hot pan and try to pan fry it. The problem is when the chicken looks done and both sides have the nice juicy cooked white/tan skin I cut the middle and its still raw...should I scorn it? (placing cuts throughout the chicken to let it cook from the inside?) because the chicken seasoning ends up burning and the chicken burns a little as well....what should i do?
